Dinner in Five!

Last night, I made dinner in 5 minutes. No joke.

I had a Green Giant Digestive Health frozen side (white beans, spinach and carrots in some kind of sauce=180 calories for the whole box which was 2 servings) and a chicken apple sausage in the freezer. Cooked the GG side in 3 minutes, the sausage in 2. Thank you, microwave! I sliced the sausage into the bean mixture and was good to go.  Total calories: 310. Total Cost: $2-3.

Honestly, it was just fine considering I had just gotten back from the gym and was too hungry to take time to cook something from scratch, but thought the beans were a little too hard and the sauce tasted kinda… chemically? Fake? Something was off.

I think I could have done it almost as quickly and with better flavor had I done this:

  • Slice 2 poultry sausage links and sautee  in a pan sprayed with Pam. Add a teaspoon of jarred garlic and sliced mushrooms.
  • Toss in 1 rinsed can of white beans, several handfuls of baby spinach and a splash of chicken broth. Add a teaspoon of dried oregano or go for a tablespoon of the fresh stuff if you have it. Parsley and fresh-ground black pepper is good too.
  • Cook until sausage is done and spinach is wilted.

Use low sodium broth and beans to keep the salt down.

Serves 2, $5-6, 308 calories per serving. This should only take 10 minutes, especially if your sausage is pre-cooked or at least defrosted.
