COOKBOOKS: Below each cookbook, I’ve also noted my favorite recipes from it.

Cooking Light Magazine

  • okay… not “officially” a cookbook, but every month has a bunch of new recipes I always want to try. The only problem is keeping up with them! It also helps that their recipes–because it’s a monthly magazine–are in season, so it’s not difficult to find inexpensive ingredients and get the freshest produce available.

The Food You Crave by Ellie Krieger

  • Roasted Pork Loin with Parsley Shallot Sauce
  • Sugar Snap Peas with Miso Sauce
  • Steak Tacos with Cucumber Avocado Salsa

The Most Decadent Diet Ever by Devin Alexander

  • Boneless Buffalo Strips
  • Eggplant Parmesan
  • Italian Turkey Sausage (don’t be scared–it’s surprisingly easy to make your own and has much less fat than the turkey sausage you buy at the store)
  • General Pao’s Chicken

The Biggest Loser Cookbook

  • Pumpkin Pie Cream of Wheat (I also apply the recipe to oatmeal–love it!)
  • Chicken Lettuce Wraps
  • Not Really Fried Rice
  • Mo’s Spinach Ricotta Bake
  • Dave’s Teriyaki Tofu

The New American Plate

  • Spaghetti Squash
  • Gazpacho
  • Banana Oatmeal Cookies
  • Pecan Chicken Salad

The Schwarzbein Principle Cookbook

  • curried cauliflower
  • dressings, sauces & marinades
  • basic recipes for a variety of healthy grains and beans

Eating for Life

  • Asian Beef Stir Fry
  • Chocolate oatmeal
  • Cajun Chicken

Weight Watchers Ultimate Flex & Core Cookbook

  • shrimp diavalo
  • shitaake pilaf
  • Tuscan Chicken thighs
  • miso asparagus

Weight Watchers Momentum Cookbook

  • Pork & mushroom stir fry
  • Asian-style pork, mushroom & noodle soup
  • Gingered Beef & Broccoli

Hungry Girl: Recipes & Survival Strategies for Guilt-Free Eating in the Real World

  • Note: I tend to modify these recipes frequently, because I tend to avoid fat-free/fake products because they are often highly processed and manufactured.
  • Ginormous Cereal Bowl-anza
  • Eggs Benechick
  • Butternut Home Fries
  • Lord of the Onion Rings

Additionally, I use the following cookbooks as a general go-to and reference:

  • How to Cook Everything Vegetables
  • The Cooking Light Complete Cookbook
  • Better Homes & Gardens New Cookbook
